Pork


We are raising Berkshire hogs this year.   "Puddles", our sow, is due in June and we are looking forward to offering our customers genuine Berkshire pork. 
 
It takes about six months for the pigs to finish out as 250
lbs hogs.  At this size, they are take to an ISDA inspected processing facility and butchered per the customer's instructions.
 
A whole hog will typically produce 130 lbs of meat; half hog, 65 lbs; and a quarter hog, 35 lbs.
 
 
While amounts will vary from hog to hog, typical cuts of meat from a whole hog are as follows:
 
 
 Ham, Fresh or Smoked  23.4 lbs
 Bacon  20.8 lbs
 Loin Roast or  Chops   20.8 lbs
 Spare Ribs  3.9 lbs
 Shoulder/Butt Roasts  10.4 lbs
 Picnic Shoulder  9.1 lbs
 Sausage or Pork Burger  10.4 lbs
 Total Meat Products  130 lbs
